This week is the start of my SUPER healthy eating!
I generally eat healthy anyway but in a bid to get the best results for myself while I’m training at FITTSTEPS, Jessica has sent me on a food plan which I will be following.
It is a much cleaner diet than usual.
This is one of the simplest and tastiest lunches.

You will need 1 breast of Chicken, rocket leaves, cherry tomatoes, cajun spice, chilli flakes, dash of olive oil & juice of a lemon.
Season the raw chicken breast with cajun & chilli flakes, put a dash of olive oil over the chicken, place under a fully heated grill for 10 minutes. Turn chicken breast over and season with cajun & chilli. Place under grill for a further 10 – 15 minutes.
Prepare your salad, wash the rocket leaves and tomatoes. Place on the plate.
Ensure the chicken is fully cooked.
Once chicken is fully cooked, place over the salad and squeeze lemon juice all over salad.
And that’s it 🙂 So simple! Of course you can use whatever salad you like just make sure it is fresh!
When seasoning the chicken, you only need a small sprinkle.
