A good healthy breakfast will set you up for the day! Also I find if you have a decent healthy brekkie it works wonders for your digestion.TMI? Sorry lol 🙂
Here are my favourite breakfasts 🙂
2/3 mushrooms, 1 pepper, handful of spinach leaves, 6 slices of chorizo, 2 eggs & coconut oil.
Add a tablespoon of coconut oil to a hot frying pan, wait for oil to melt and add chorizo slices, fry for 1 minute on a medium heat, add sliced pepper & chopped mushrooms, fry for about 4/5 minutes, once chorizo and veg is nearly cooked through add spinach leaves and place lid on pan, leave cook for another 4/5 minutes, once spinach has wilted crack & beat 2 eggs and add to omlette mix. Lower heat and leave cook for 5/6 minutes, flip omlette and cook for a further 5/6 minutes. Ensure egg is fully cooked through. And voila, a beautiful omlette that is sure to fill you! And extremely healthy 🙂
Beans on Toast 🙂
Very plain and boring lol but I love beans on toast! So yummy, good for you & (another tmi) brilliant for digestion! I love the Heinz Snap Pots as one pot is the perfect amount for one person, beans are high in fibre, virtually no fat, no artificial colours, flavours or preservatives! And low GI bread helps keep your blood sugar under control and low in sugar. I purchase both the bread and beans in Aldi. Heinz beans regularly come into Aldi.
Scramble egg on toast 🙂
Again using low GI bread. I beat 2 eggs, add the tiniest bit of low fat milk and into the microwave for about 3/4 minutes depending on your microwave. Butter is optional. Eggs are a good source of protein, rich sources of selenium, vitamin D, B6, B12 and minerals like zinc, iron & copper. They are also low in fat and cholesterol.
Harvest Morn Benefit with red fruit 🙂
I really like this a few mornings of the week with low fat milk. I do wish there was more red fruit in it though 😦 It is slightly high in sugar but I think that’s due to the dried fruit. It is very low in saturated fat and a good source of Vitamin A, Vitamin C, Calcium & Iron 🙂
