Soup is an excellent meal to ensure you are getting plenty of vitamins and nutrients.
And its extremely low in sugar.
I love having soup for my lunch as it is so filling.
What you’ll need – For about 4/5 servings.
- 2 small brocolli heads
- 1 large turnip
- 3 carrots
- 1 parsnip
- 1 onion
- 2/3 vegetable stock cubes
- hand blender
Peel and chop all vegetables and place into a large pot with a pint of water.
Place lid on pot and let vegetables cook on a medium heat for around 20-25 minutes.
Boil kettle, place 1 stock cube in pint glass, fill with hot water, mix it up and pour into pot.
Repeat again with second stock cube.
If you would like the soup more watery then add a 3rd stock cube.
Leave cooking with a lid on, on a lower heat for a further 10 minutes.
Ensure all vegetables are cooked and take off the heat.
Using a hand blender, blend until desired consistency.
I do not add any salt or pepper so add when serving if you like.
This is literally one of the healthiest meals you can eat, so if you are watching your weight, trying to lose weight or just trying to ensure you are getting all your nutrients then soup is the way to go.
As always you can add more of or less of certain ingredients, it all depends on your preferences.
I usually have my soup with a slice of low GI bread which ensures I am getting my carbohydrates.
Also Lidl/Aldi do specials on fruit & veg every week so you can get lots of the ingredients for this for less than a euro 🙂
You can also now get stock cubes with reduced salt/sodium so I would suggest purchasing them if you are concious of salt intake.
